Berry cheesecake raw brownies

I don’t know what it is, but recently I’ve been really struggling to juggle everything with work, fitness, food and creating recipes. I just feel like my inspiration and recipe ideas just aren’t quite what they usually are at the moment! To be fair, I have been extremely swamped with work and feel like I haven’t had two minutes to collect my thoughts together, let alone have a productive day whipping up healthy desserts in the kitchen. To be honest, I guess a lot of it comes down to organisation and priorities. If something is really important and a priority to you, then you will find the time to include it into your routine (in theory anyway.) Something that I have started to doing recently, which I’ve found to be a massive help is writing things down and making to do lists. This probably won’t work for everyone, but for me this has made a real difference and has helped me to organise daily tasks and be more efficient with getting things done. I also find that writing things down on paper and being able to see the tasks in front of me, makes them feel a lot more manageable and helps me to avoid getting all stressed out about my workload.

Anyway, I’d been experimenting a little with raw brownie variations recently- most of which have involved some sort of caramel or peanut butter topping. I wanted to give something a little bit different a go, so decided to try out a fruity topping instead here. I absolutely love the combination of berries and chocolate, so thought that adding a berry cheesecake layer on top of a raw brownie might be a pretty good place to start.. and it was indeed! This isn’t just any old cheesecake topping however.. these are vegan and refined sugar free as well! The cheesecake part is made from a base of cashews and along with the coconut milk, this creates a lovely smooth, creamy mixture that can be used for cakes, frostings, as a cream substitute and much much more! The slightly sour flavours from the berries create such a delicious contrast against the rich, nutty brownie layer. It’s all just soooo good! 

What’s more, these are really easy to prepare, so if you have guests coming over or need to put something together quickly for a dinner party, then these are perfect for such an occasion. They certainly look pretty impressive and I reckon you’re guests will be surprised when you tell them just what’s in there and that they’re actually pretty healthy!

Berry Cheesecake Raw Brownies

Brownies
  1. 1/2 cup oats
  2. 1/2 cup almonds
  3. 1 cup dates
  4. 2 tbsp natural sweetener (coconut nectar honey)
  5. 3 tbsp cacao powder
  6. 2 tbsp macadamia butter
  7. Pinch of sea salt
Berry cheesecake
  1. 1/2 cup cashews
  2. 6 tbsp coconut milk (canned)
  3. 2 tbsp natural sweetener (coconut nectar honey)
  4. Tbsp coconut oil
  5. 1/2 cup raspberries
  6. 2 tsp freeze dried berry powder- I used Arctic power berries blackcurrant powder
Add ingredients to shopping list

Instructions
  1. Place the almonds and oats into a food processor and blend until they form a rough flour.
  2. Add in the remaining brownie ingredients and blend again until everything begins to stick together.
  3. Take the brownie mix and press into the base of a tin to create a flat surface and leave these in the freezer to set whilst you prepare the cheesecake layer.
  4. Add the cashews, coconut milk, sweetener, coconut oil, berries and powder into a blender or food processor and blend until completely smooth and creamy. Pour this over the top of the brownie base and return these to the freezer for around 2 hours.
  5. Slice the brownies into pieces and garnish with some sliced strawberry and a drizzle of melted raw chocolate.
