Raw carrot cake bites with coyo frosting

  1. Place the pecans into a food processor and pulse these for a few seconds to break them down into smaller pieces.
  2. Add in the remaining cake ingredients and blend everything until well combined and sticky. Transfer this onto a lined baking sheet and press down to form a square cake shape. Leave this in the freezer to set.
  3. To make the frosting, mix the coconut yoghurt with the maple syrup and spread this over the top of the cake. Place these into the fridge and leave for a few hours before slicing and decorating with some pecan nuts.
