Raw Christmas Cake slices

I’ve never really been one to opt for Christmas cake when choosing from the festive dessert selection.. fruit cake just isn’t really my thing, and I’m not a huge fan of royal icing to be honest either. So I think it’s safe to say that my wedding cake probably won’t be of the traditional kind. These Christmas cakes on the other hand.. well they’re a completely different story! The main ‘cake’ part is a delicious combination of mixed nuts, dates, currants and festive, warming spices. The dates and currants provide such an incredible natural sweetness and rich fruity flavour, that pair so well with the cinnamon and ginger. As the fruit is pretty much what binds the whole thing together, it also has a really nice gooey texture and will never leave you with a dry and crumbly cake! 

As for the icing, I love a cashew cream frosting and to be honest, I don’t think you can go too far wrong with adding this to pretty much any cake. It’s simple, but just works so well! I’ve kept this one plain and just added a bit of natural sweetener to this one and that’s it! Cashew nuts really do create the most beautiful, sweet and creamy frosting and once you get the hang of it, it’s actually so easy to make! You can also flavour them or add different fruits and superfood powders to change the colour if you would like to! Berries work really well for this and you can create a really pretty, vibrant pink icing! 

I was hoping that I’d have some of these left over in my freezer to take home for my family to try, however, shortly after i’d finished photographing these, my boyfriend proceeded to demolish the whole lot for a pretty hefty afternoon snack. They’re also pretty thick little cake slices as well, so I’m surprised he was able to walk after the amount he’d eaten! You should definitely give making these a go for a little festive treat; but maybe just stick to eating the one at a time haha!
