Mango & coconut overnight oats

This time last year I made the incredible discovery that was.. my love for champagne mangos! If you’re unfamiliar with these and haven’t tried them yet, then you seriously need to get some of them in your life.. like as soon as possible! I’m not exactly sure which supermarkets sell them outside of London, but I think the only place that I’ve been able to find them is Wholefoods (which is luckily very local to me, so I always get my boyfriend to pick them up on the way home from the gym!)

Whilst I usually demolish them as soon as they make their way into the fruitbowl; this time I thought I would try and save some to use in some recipe creations, like these reaaaaally tasty overnight oats. Overnight oats are a good alternative to porridge at this time of year, if you’re not really in the mood for a hot meal when the weather’s slightly warmer. I love the really fresh and fruity flavour that you get from the mango and it gives the whole dish such an amazing natural sweetness. I would probably describe it as a cross between a smoothie and overnight oatmeal- so two incredible breakfasts in one! I’m lucky enough to be able to prepare my breakfast each morning, as I work from home; but things like this are ideal if you’re looking for something that you can make the night before if you’re in a rush of a morning. It would also be a great little snack to prepare for yourself to enjoy mid-morning or afternoon. You can then top it with some fresh berries, coconut and whatever else takes your fancy. If you wanted to up the protein content of the dish, you could always experiment with adding some protein powder into the mix. I reckon a vanilla blend would probably work the best with these flavours. 

Another thing that I’ve added in here, is one of the new superfood powders from One Earth Organics– and here I’ve used their Rejuvenate vinate blend which you can grab here. This is a blend of baobab, maca, goji berry, cacao and Acerola cherry. I chose to use this particular one here because it includes a selection of fruity flavours, which I thought would work really nicely with the mango. These blends are a really quick and easy way to get in a nice blend of superfoods all in one, rather than having to add all of these things in individually.

  1. 1 whole champagne mango- or one small regular mango
  2. 3/4 cup jumbo oats
  3. 1/2 cup cashew/coconut milk
  4. 1 tsp One Earth Organics Rejuvenate powder
  5. Coconut chips to garnish
Add ingredients to shopping list

  1. Peel and slice the mango and pop this into your blender along with the milk and superfood powder. Blend everything until smooth.
  2. Mix this smoothie blend with your oats and leave this to set in the fridge overnight.
  3. When you're ready to serve, add a little more milk to thin it out if needed and garnish with the coconut hips and some fresh berries.
