I genuinely feel like last night, I have never felt to hot and stuffy in my entire life. It was an absolutely beautiful sunny day in London yesterday, but last night my living room felt like it was literally about 100 degrees as I attempted to have a relaxing evening in front of the TV. This berry ripple nice cream would have been the absolute perfect dessert for such an occasion, so I thought, seeing as we’re due a rather sunny week ahead of us, I would share the recipe with you all today.
The ice cream itself is honest so super quick and simple to make; with the key ingredient being frozen bananas! In case you’ve never tried using frozen bananas in recipes before (where have you been for the last couple of years?!) they make amazing thick & creamy smoothies and soft serve ice creams! You can actually just blend them completely on their own and you’ve be left with a truly incredible banana soft-serve with no dairy or added sugars to be seen what so ever! A truly delectable, single ingredient treat that tastes so sweet and indulgent! For this recipe, I decided to get a little more creative and bring you something slightly different- with this super fruity berry ripple addition!
Berries are undoubtably one of my favourite kinds of fruit and I would definitely say that I consume at least one portion of them per day; whether that be in smoothies, on their own or to top porridge or yoghurt bowls, berries are my absolute go to. I just love how they have that sweet yet slightly sour taste at the same time; they’re super refreshing and are also a great source of vitamins. Berries are incredible this time of year in the UK and I always try and make the most of produce when it’s seasonal. As a child I used to love to go berry picking at a nearby farm, but I’m fairly sure that at least 50% of the fruit would make it’s way into my tummy rather than actually reaching my basket!
As well as the mixed berries, I’ve added in some Indigo Herbs acai powder to really intensify that berry flavour and because the acai berry is high in antioxidants. You’ve probably seen this used in the infamous acai bowls that are constantly floating around Instagram, but you can also add it into things like: smoothies, desserts, granola, salad dressings and in this case.. ice cream!
- 3 large frozen bananas
- 1 heaped tbsp coconut cream
- Dash of vanilla extract
- 100g raspberries
- 2.5 tbsp brown rice syrup
- 1 tsp acai berry powder
- Start off by making the berry ripple: blend the raspberries, syrup and acai powder together until smooth and place this into the fridge to chill.
- For the ice cream, blend the frozen bananas, coconut cream and vanilla in a food processor until smooth and creamy.
- Carefully stir through the berry ripple and serve.
