When it comes to things like dips and sauces, there are two things that I am a HUGE fan of.. and they would be.. hummus and pesto! Correct me if I’m wrong, but I think that these are probably the best accompaniments to go along side pretty much any meal and you can even combine the two! Which reminds me, I do actually have a recipe for a pesto hummus which you can check out here. Anyway, I thought I was a fan of the regular, green basil pesto, until recently, when I made this sun-dried tomato pesto.. and guys, it’s an absolute game changer! I didn’t think it would be possible for me to like pesto any more than I already did.. and I couldn’t have been more wrong! I don’t mean to blow my own trumpet here, but this stuff is seriously good!
It has fairly similar base ingredients to a regular pesto, with the cashew nut and basil combination. However, the addition of the sun-dried tomatoes and tomato puree just provide the most delicious, rich tomato flavour with a really tasty salty kick. As much as sweet treats are rather moorish and I can’t deny they do taste good.. I think my heart would have to go to the savoury side if push came to shove. I think I would definitely choose a starter and main, as oppose to a dessert when eating in a restaurant- so really savoury, flavoursome dishes like this are right up my street.
Here I’ve just tossed the pesto sauce through some spaghetti, as I was actually serving this to my younger brohter- who, I’m pleased to say actually really liked it. I find that he’s the ideal candidate to test my creations on because he can be a pretty fussy eater at times; so it’s always really nice when I make something that he can enjoy as well! This is such a great option for a family friendly meal and you could pair it with anything really- you don’t just have to stick to pasta! However, in my opinion, pesto pasta is one of the ultimate comforting week-night meals and something that my mum would cook for me all of the time. You can then toss in whatever veggies or protein that you have let in the fridge and have a really scrumptious meal in under 20 minutes! I love adding in some prawns, spinach and feta cheese!
- 50g sun-dried tomatoes
- 30g cashew nuts
- Large handful of fresh basil
- 1 heaped tsp tomato puree
- Sea salt and pepper to taste
- Water Add the sun-dried tomatoes, cashews, basil, tomato puree and a dash of water into a food processor (I used my Ninja Kitchen food processor) and blend until reasonably smooth.
- Season to taste with salt and pepper and add a little more water if needed. Blend until you're left with a fairly creamy pesto mixture and transfer into a jar/container.
- Serve alongside salads, avo toast or stir through some pasta.
