I’ve been making so many different pancake variations lately that I actually think I might have lost count of just how many blog posts I had planned! This is another vegan pancake recipe (I think I’m finally getting the hand of making vegan pancakes, yay!) but these ones are on the fruitier side with a delicious burst of blueberry flavour throughout, as well as juicy warm blueberries dotted inside the pancakes also.
Can we just begin by appreciated how awesome the fact that these pancakes are blue is?! I mean.. blue pancakes that taste like berries.. who doesn’t want that?! I’ve been obsessed with these freeze dried berry powders from Arctic Power Berries recently.. and like when I become obsessed with a new product, I’ve been adding them to pretty much anything that I can! I don’t know what it is, maybe I’m just a bit of an obsessive person, but once I discover something new that I fall in love with, I just want to use it 24/7 in everything and anything. I’m not really the kind of person that gets bored of having the same foods either; if theres a food or dish that I like, I will happily eat it over and over again. I mean, If it’s not broke, why fix it, right? Anyway, these powders are a really handy little ingredient to have in your kitchen cupboard, as you can sprinkle them on cereal, add them to porridge, smoothies and also desserts. They give a really tasty little kick of fruity flavour and are packed with vitamins too!
So, back to pancakes..
I’ve just been thinking and I might have a slight problem here. As I’ve been making pancake recipes left, right and centre.. I’m not in the slight predicament of not knowing which recipe to make on the actual day? Well, I suppose I could do a different one for each meal? Pancakes for breakfast, lunch, snacks and dinner.. how does that sound?
I would probably recommend these pancakes if you’re looking for a recipe that doesn’t contain eggs or dairy and want something a little bit lighter and fruitier than a chocolate kinda’ pancake. So maybe this would a good breakfast option and you can save the chocolatey ones for pudding later. The addition of the blueberries is literally one of the most delicious things ever, as they get all warm and melty and just explode all of the incredible berry flavour upon biting into them! Mmm, okay now I really fancy some pancakes!
- 1 banana
- 1/3 cup brown rice flour
- 1/2 cup almond milk
- 1 tsp Arctic Berries blueberry powder
- 1/2 tsp baking powder
- 1 tsp brown rice syrup
- Handful of blueberries
- Add all of the above ingredients into a blender (apart from the blueberries) and blend until smooth.
- Heat a little coconut oil in a frying pan and pour a little of the batter in once the pan is hot. Repeat this for as many of the pancakes that will fit into the pan. Add a few blueberries to each pancake.
- Once they start to bubble, flip and cook on the other side.
- Serve the pancakes and enjoy!
