Paleo Cranberry & Buckwheat Granola


1 cup buckwheat groats

1 tbsp coconut oil

3 tbsp maple/rice syrup

Heaped Tbsp Arctic Berries Cranberry powder

1/2 cup almonds- chopped Handful dried cranberries

Tbsp poppy seeds

Pinch sea salt


Preheat your oven to 180c and line a tray with baking paper.

Combine all of the dry ingredients in a mixing bowl (apart from the berry powder)

Gently heat the coconut oil and stir through the sweetener and berry powder.

Pour this over the dry ingredients and mix well so that everything is evenly coated.

Spread the mixture onto your baking tray and pop this into the oven for around 15-18 minutes. Toss the granola half way through to prevent burning.

Once the granola is cooked, allow this to cool completely and form nice clusters before storing in an airtight jar/ container.

Serve with plant milk, yoghurt or simply enjoy by itself!
