2 ripe bananas
1 grated Jazz apple
4 tbsp maple syrup
150g gluten free flour/oat flour
2 whole eggs
65g ground almonds
1/2 Tsp ground ginger
Tsp ground cinnamon
Zest from 1/2 an orange
Tsp baking powder
1/3 tsp bicarb
Preheat your oven to 180c and line a loaf tin with baking paper.
Mash the bananas with the back of a fork until smooth, then stir through the maple syrup.
Beat in both of the eggs and add the grated apple and orange zest.
Pour in the dry ingredients and mix everything together until fully combined, then fold in the raisins.
Pour the mixture into the loaf tin and pop the cake into the oven for 30 minutes to bake.
Carefully transfer onto a wire wrack and allow to cool thoroughly.
Serve with toppings of choice and enjoy!
