Gluten Free Red Velvet Waffles

Ingredients

3/4 cup almond milk

1/2 banana

1 cup gluten free flour- I used buckwheat

Heaped tsp baking powder

3 tbsp Good Guru Good Berries Powder

Pinch salt

Dash vanilla extract

Heaped Tbsp cacao powder

Tbsp maple syrup

1 whole egg

1 egg white

2 Tbsp olive oil

Cooking spray or coconut oil for cooking

Instructions

Mash the banana with the back of a fork and beat in the eggs, olive oil, maple syrup, vanilla and milk. In a mixing bowl, combine all of the dry ingredients and mix.

Fold the dry and wet ingredients together and beat until you’re left with a smooth mixture.
Preheat the waffle iron and once hot, spray with cooking spray or a light brush of coconut oil.

Pour on some of your waffle batter and cook according to the instructions on your machine. Repeat with the remaining mixture.

Serve with toppings of choice. I love to layer peanut butter and fresh berries here!
