I’ve been incredibly slow off the mark with the Easter recipes this year! So, here’s the start of what will hopefully be a few more to come before the main event and we have some hot cross bun flavoured energy bites! I love all of the sweet, spiced flavours for this time of year- they just taste and smell amazing!
These are a super quick and easy no-bake snack that you can make in a big batch to set you up for the week ahead. You’ll only need a few ingredients and they can all be made in a food processor and then just stored in the fridge or freezer.
What I really love about these kinds of recipes is that they’re fairly adaptable and you can swap and change different ingredients, depending on what you have to hand. For example, you could switch up the almonds and nut butters for a different kind of nuts or seeds and could also add in various superfood powders or things like chia seeds and cacao nibs.
- 1 cup almonds
- 3 tbsp smooth peanut butter
- 3 tbsp vegan caramel protein powder
- 1 cup pitted dates
- Pinch sea salt
- Tsp cinnamon
- Pinch vanilla powder
Place the almonds into a food processor and pulse until roughly broken down.
Add in the remaining ingredients and blend until everything is well combined and sticky.
Roll into balls and pop these into the fridge to chill for a couple of hours.
