I honestly think that it’s safe to say that I’ve never made so many different energy ball recipes in all of my life. I don’t know what’s come over me, but lately I’ve just been hit by some sort of strange obsession. There are currently two plates piled high with different varieties say in my fridge at this very moment. These are energy balls with a difference, as you might have guessed from the title.. as they feature the amazing mushroom coffee from SuperU. This is essentially a delicious blend of coffee and superfood mushroom powders which have incredible health properties like; immunity boosting and enhancing your focus.
I’ve been trialling this product for a couple of weeks now and honestly couldn’t recommend this and the brand enough. They also offer a wide range of superfood and protein powders which you can read more on here.
They’re just so practical for a multitude of different reasons.
No.1- They’re super easy to make. No fancy technical work required here. Simply blend everything together and roll into balls. They don’t even have to look pretty or be the same size.
No.2- They can be super affordable to make and you can pretty much throw the contents of your kitchen cupboard in there.
No.3- They’re SO handy to have in the fridge for a grab and go snack and are really portable. No time for lunch? Energy ball. Pre workout snack? Energy ball. Dessert? Energy ball.
ALSO.. because of the amazing addition of the mushroom coffee, these literally ARE energy balls. Honestly these could become my new favourite thing. They’re the ultimate snack for whenever I feel like I need a good pick me up.. and sharpish!
- 1 cup oats
- 3 tbsp smooth cashew butter
- 1 tbsp coconut oil
- 2 tbsp honey or agave syrup
- 1/2 cup quinoa or rice puffs
- Tsp SuperU Shroom coffee (dried)
- 2 tbsp freshly brewed SuperU shroom coffee
- Pinch sea salt
- In a food processor, combine all of the ingredients and blend so that everything is well combined and sticks together.
- Roll the mixture into balls and pop these into the fridge for a couple of hours to chill.
